Answer: Hello, GI (glycemic index) for the Rye berries is 65-70, for the cracked ones - 35-40. -
Question:
Does it need to be soaked?
Answer: Depends on the recipe and use. If you are throwing it into soup, no. With most yeast breads, if not soaked, there is not sufficient water in the mix to soften the grains. The rough grains cut the gluten as it is forming and the result is a flat and dense loaf. I use it in yeast bread and soak for an hour in boiling water. When you add it to the wet ingredients watch the liquid and cut back a little so you dough isn’t too sticky. For the dense, soda leavened Dutch Rogebrod, I mix all the wet ingredients and keep them refrigerated overnight. Hope this helps! -

Answer: I did not have a issue with bugs. Grains can be stored up to 2 years in ideal conditions. I try to use within 6 months after I open. -
